One-Pan Salmon and Asparagus

This one-pan salmon and asparagus recipe is extremely quick and easy to make. With only five ingredients (excluding salt and pepper), there’s almost no prep time, which is always a plus.

The only thing worse than prepping food is the clean up. This dish makes cleaning up a breeze since you are only using one pan. This is a great recipe for those busy nights when you don’t have a lot of time or just don’t feel like spending hours in the kitchen.

Optionally you could add in additional veggies, however note the cook time might need to be altered. For example, if you added potatoes, I would probably sauté them for a few minutes before adding the rest of the ingredients.

If adding things such as cherry tomatoes or squash, I’d add them towards the end with about 3-4 minutes remaining. This allows them to warm through without completely turning to mush.

Mushrooms and onions are other ingredients you could add for additional flavor. The options are endless.

A simple one-pan salmon and asparagus main dish that's ready in only 15 minutes!

Ingredients

  • 4 six-oz. salmon fillets
  • 24 asparagus spears
  • 2 tablespoons coconut oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • Pinch of salt and pepper

Instructions

  1. Melt coconut oil in large pan on medium-high heat.
  2. Place asparagus in single layer on bottom of pan, and place salmon on top. Top with garlic. Sprinkle with salt and pepper.
  3. Place lid on and cook for about 8-10 minutes, checking regularly to prevent burning.
  4. When fish is done and easily flakes with a fork, turn off heat and drizzle with lemon juice.

    I've always meant to eat more fish but I'm terrible at cooking it.. this seems easy though so I will definitely be trying it! Especially because we love asparagus! Thanks for the great recipe :)
